Lavender Collins is a floral variation on the gin, lemon and soda combination. It suits a spring or summer aperitif, with enough soda to keep the drink long and refreshing. Its color depends on the syrup: food-grade lavender syrup may be nearly clear rather than vividly purple.
1 cocktail · Prep: 5 minutes · Total: about 5 minutes
Ingredients
- 60 ml (2 fl oz) gin
- 30 ml (1 fl oz) freshly squeezed lemon juice
- 20 ml (about ⅔ fl oz) food-grade lavender syrup
- 90 ml (3 fl oz) chilled soda water
- Ice cubes for shaking and serving
- 1 lemon wheel, for garnish
Instructions
- Fill a Collins glass with fresh ice.
- Add the gin, lemon juice and lavender syrup to a cocktail shaker with ice. Shake for 10–15 seconds until cold.
- Strain into the prepared glass, then top with the chilled soda water.
- Stir gently once or twice, garnish with the lemon wheel and serve immediately.
Keep the floral flavor balanced
Use a lavender syrup sold for food and drinks; essential oil or decorative lavender is not a substitute. Syrup strength varies, so a restrained amount avoids an overpowering floral taste. Never seal soda in the shaker: it is added after shaking.
Contains alcohol. Check syrup and spirit labels for allergens.
