Orange tiramisu cups layered with ladyfingers and mascarpone, topped with candied walnuts

Orange Tiramisu Cups with Crunchy Candied Walnuts

A spoonful of this tiramisu starts with crisp candied walnuts and ends with soft, orange-soaked ladyfingers. Fresh zest gives the mascarpone cream its orange aroma without thinning it.

How to keep the walnuts crunchy

Assemble the cups the night before and add the walnuts just before serving to keep their crunch. Grate only the colored part of the orange peel, since the white pith can taste bitter.

AmountIngredient
120 ml fresh orange juice (½ cup)
1 tsp finely grated orange zest
250 g mascarpone (about 9 oz)
150 ml cold heavy whipping cream (about ⅔ cup)
25 g powdered sugar (about 3 tbsp)
100 g crisp ladyfingers (about 3½ oz)
45 g walnuts* (about ½ cup), finely chopped
20 g granulated sugar (about 1½ tbsp)
1 small pinch fine salt

Instructions

  1. Toast the walnuts in a dry skillet for 2–3 minutes, stirring, then transfer them to a plate. Melt the granulated sugar in the skillet over medium heat. When it turns light amber, stir in the walnuts and salt. Spread thinly on parchment, let cool completely and break into small bits.
  2. Stir the mascarpone, powdered sugar and about three quarters of the orange zest just until smooth. Whip the cold cream separately to stiff peaks and fold it in. Save the remaining zest for the topping.
  3. Break the ladyfingers to fit, then dip each piece briefly in orange juice. Layer the ladyfingers and cream in six 5- to 6-ounce dessert glasses, making two layers of each and finishing with cream.
  4. Cover and refrigerate for at least 4 hours. Scatter the candied walnuts and remaining orange zest over the cups just before serving.
